What’s for Dinner?`

I don’t know about you, but I’m always looking for new inspiration for my dinner menu. It’s easy to get into a rut of eating the same thing week after week. Sometimes it’s hard to think outside of the box…or pizza box.

That’s why I decided to share my dinner ideas weekly. Each week I plan 5-7 dinner ideas depending on what activities that we have on the calendar. I’ll also share my shopping list for those meals to save you even more time.

Dinner 1 – We eat fish tacos ALOT at our house. My husband and I love them! The girls sometimes swap out fresh fish for fish sticks – but we’re working on it. My 9 year old will eat an entire avocado herself with dinner!

  • Mahi Mahi Fish Tacos
  • Yellow Rice
  • Guacamole – I do cilantro, lime and avocado, salt/pepper, (red onion and tomato if I have it). Here’s a fancy recipe.
  • Black Beans

Shopping List

  • Fish – Mahi Mahi, Flounder, Cod, Halibut, Tilapia
  • Seasoning (I use old bay a lot for fish or some cumin/chili powder/garlic.)
  • Soft Corn Tortillas – I usually find these in the international aisle.
  • Shredded Red Cabbage
  • Greek Yogurt or Sour Cream
  • Black Beans
  • Avocado
  • Lime
  • Cilantro
  • Yellow Rice

Dinner 2

  • Brussel Sprouts
  • Apple Sausage
  • Apple Chutney – I usually just throw some chopped apples, onion and olive oil in a pan and let it cook down. It’s really good on pork or sausage.

Shopping List

  • Brussel Sprouts (shaved or sliced)
  • Pancetta or Bacon
  • Balsamic Vinegar
  • Garlic
  • Apples 2-3
  • Onion
  • Apple Chicken Sausage

Dinner 3

Shopping List

  • Chicken Thighs – 1 1/2 lbs
  • Onion – 1
  • Potatoes (I use 2-3 Parsnips)
  • Carrots – 1lb
  • Chicken Broth (11 ounces)
  • White Wine (3 ounces)
  • Thyme

Dinner 4

  • Buffalo Cauliflower
  • Chopped Salad

  • Buffalo Sauce
  • Yogurt Blue Cheese or Ranch Dressing (optional)
  • 1 Head Cauliflower
  • Chopped Salad Mix

Dinner 5

Shopping List

  • Ground Turkey (2lb)
  • Onion
  • Parmesan Cheese
  • Bread Crumbs or Almond Meal
  • Eggs
  • Fresh Parsley
  • Garlic
  • Sauce – (we either do a simple homemade sauce or the Simply Ragu)
  • Pasta – traditional, veggie or veggie noodles
  • Garlic Bread
  • Caesar Salad Mix
