What’s for Dinner? Lemon & Herbs

Meal planning isn’t always the most enjoyable task of your week. So, each week I do my meal planning and share it with you. Now you don’t have to wonder – What’s for Dinner? I also share my shopping list for all of these healthy dinners to save you even more time each week.

What’s for Dinner Recipes this week include: a Pasta, Pork, Veggie, Chicken and some Keto friendly dishes too.

Dinner 1 – Keto Friendly – Since we’re celebrating Chinese New Year, I thought I’d include this Chinese dinner. I’ve been wanting to make this egg roll in a bowl for a while – it looks really simple & yummy! It’s also Keto friendly for our low carb friends.

Shopping List

  • 1lb ground (chicken, pork or sausage)
  • coleslaw mix
  • soy sauce
  • ginger
  • garlic powder
  • green onions
  • Cauliflower or Brown Rice

Dinner 2 – A simple pasta recipe is a great thing to have on hand for busy school nights. Carbonara is a delicious dish and it comes together in moments with just a few ingredients. You can also omit the bacon and make this a meat-free dish.

  • Spaghetti
  • Bacon
  • Frozen Peas
  • Eggs
  • Spices: Salt & Pepper
  • Parmesan
  • Salad Mix

Dinner 3 – I think I must be thinking of spring with these lemon and herb dishes. I like to try to use fresh herbs a couple of times during the week if I’m buying them. You can also throw fresh herbs into your eggs in the morning to make them extra fancy.

  • Spices: Salt & Pepper, Lemon Pepper Seasoning, Fresh Garlic, Red Pepper
  • Butter
  • Lemon
  • Chicken Broth
  • Fresh Parsley and Rosemary
  • Honey
  • Broccoli

Dinner 4 – Here’s another great recipe for those lemon and fresh herbs. Salmon and dill go together so well – if you’re not a huge salmon fan, try it with this dill sauce. I try to limit my starches with dinner but no one can turn down these herb potatoes.

  • Sour Cream
  • Fresh Dill
  • Spices: Salt & Pepper, Fresh Garlic
  • Asparagus
  • Mini Potatoes
  • Fresh Parsley and Rosemary or Thyme

Dinner 5 – I’m not sure that I’ve ever met anyone that doesn’t like a pulled pork sandwich. I love that you can put it in the slow cooker in the morning and come home at the end of the day to a delicious meal. I just serve this with pickles, cole slaw and potato chips. This is a great way to keep meal time simple when your day is packed with activities.

Shopping List – I tend to skip the extra sugar and soda because I don’t like the sauce really sweet.

Dinner 6 – Veggie Option – This is a great vegetarian option for dinner. I like to do a minimum of 1 meal a week in our house that’s meat-free. Baked potatoes or twice baked potatoes are filling and make a complete meal when paired with a salad.
